Egg Roll in a Bowl

Basically this is just the insides of an egg roll. Its a great little weeknight dinner and pretty healthy too!

INGREDIENTS

-1/2 of a cabbage, shredded

-2 carrots, shredded

-Gated garlic

-Grated ginger

-Soy sauce

-Sesame oil

-Sriracha

-Rice vinegar

-Sesame seeds

-Scallions

-Optional: ground turkey, Korean chili flakes

DIRECTIONS

-Heat olive oil in a pan then add shredded cabbage and carrots. Add garlic, ginger, scallion whites, salt and pepper, soy sauce, sesame oil, Sriracha, rice vinegar. Sauteè for a few minutes.

-When its softened a bit, add some water and cover it. Cook until fork tender and water is absorbed.

-In a different pan cook your ground turkey with a dash of sesame oil, salt and pepper, and Korean chili flakes (or something similar)

-Add meat into the cabbage mixture and cook together for a few more minutes. Serve over rice and top with sesame seeds, scallion greens, and sriracha aioli.

-Mayo

-Srirachia

-Sesame oil

-Garlic powder
