INGREDIENTS
-3 zucchini
-4 cloves garlic chopped
-1 large can butter beans
-sour cream
-breadcrumbs
-basil
-salt and pepper
-turmeric
-good crusty bread
DIRECTIONS
-cut zucchini into zig zag shapes
-put zucchini and garlic in an oven safe pan with olive oil and salt
-roast at 350 for an hour until the zucchini is super soft
-remove from oven and mash the zucchini slightly then add butterbeans
-add sour cream, lemon zest, breadcrumbs, seasoning and basil and serve with good crusty bread
