Pea Soup (no ham bone needed)

The easiest pea soup ever. I used pancetta instead of a ham hock or bone… or even ham. I got the pre-cubed pancetta in a package and it came out great. Make your life as easy as possible people.

INGREDIENTS

-olive oil

-2 onions diced

-3 carrots diced

-3 celery stalks diced

-cumin

-salt and pepper

-3 cloves of garlic minced

-2 containers of pancetta

-2 bay leaves

-1 lb slip peas (2 heaping cups)

-8-10 cups of liquid (use chicken broth, vegetable broth, or water)

-parmesan cheese

DIRECTIONS

-Heat oil in a large pot, when heated add the onions, carrots, celery, and cumin. Add a pinch of salt and stir. Turn the heat to low. Cover and cook for 20 minutes (when vegetables are soft)

-Rinse peas

-Add garlic and pancetta. Cook for a few minutes. Add the bay leaves, peas, and 8 cups of liquid. Add salt and bring to a boil, then lower to a simmer. Cook for 30 minutes then stir and add more liquid. Cook for another 30 minutes, stirring and adding more liquid as needed. 

-Taste and season. Serve and top with parmesan cheese.
