Roasted Tomato Soup

Finishing off the last tomatoes and other few vegetables from the garden with a great soup. I even have some tomatoes from the garden of a very sweet client mixed in there. Happy soup season!! 

INGREDIENTS

-tomatoes

-cherry tomatoes

-any peppers or other vegetables from the garden

-2 heads of garlic

-2 carrots

-2 celery stalks

-1 onion

-rosemary

-thyme

-salt and pepper

-olive oil

-broth (chicken or veg)

-cream 

-basil

DIRECTIONS

-roast everything (except broth, cream, and bsail) in a baking dish at 400 for 45 min or until its all soft

-remove the herbs and squish the garlic

-put in the blender (or use and immersion blender) with broth and cream and blend until smooth and creamy

-top with a drizzle of oil, cream and a few leaves of basil

-serve with grilled cheese
