Salmon Cakes

Upgrade your canned salmon into this almost crab cake like salmon cake. I had mine with a salad and then again the next day in a sandwich. It’s a great meal prep especially if you wrap them individually with foil so you can pop it into the toaster oven and heat it up.

INGREDIENTS

-3 cans of salmon

-2 eggs* 

-scallions

-1/2 cup panko

-parm

-old bay

-tumeric

-salt

-black pepper

-water

-olive oil for frying

Optional:

-croutons**

-jalapeno cesar dressing***

DIRECTIONS

-Mash the salmon with a fork then add all the ingredients and stir.

-Form patties and fry in hot olive oil for around 5 minutes or until the bottom is crispy then flip and fry until the other side is crispy.

*you can also use a mixture of mayo and greek yogurt if you don’t have eggs! Classic me not having a necessary ingredient..

**toss cubed old bread with oil and seasonings (I used old bay and oregano) bake at 400 for 15 minutes or until they’re crispy tossing halfway through

***whisk together 1/2 cup mayo, 1 clove grated garlic, 2 tsp lemon juice, tsp of dijon, 1 tsp Worcestershire, salt, grated parm. Then add water to thin it out and black pepper to taste
