Asian Pesto

One night I was hungry thinking about food and this idea came randomly for asian pesto using scallions as the main ingredient instead of the basil. I tried to take all the classic pesto ingredients and substitute them for asian ingredient or just things that would go well with the scallions. Try it and let me know what you think!

INGREDIENTS

Scallions 

Grated ginger

Sesame oil

Nutritional yeast

Walnuts

Rice vinegar

Olive oil

Salt and pep

Your choice of noodle*

DIRECTIONS

-Add all the ingredients to a food processor except the olive oil. Blend a bit then stream in the oil. Blend until the right consistency then taste and adjust seasoning.

-Cook your noodles then add the pesto and a splash of pasta water.

-I topped mine with sesame seeds, chili crisp, and a few chopped scallions.

*I used rice noodles because that’s what I had, but they didn’t hold up great so I would use something stronger next time. Mafaldine would be fun with this!
