Shrimp and Grits

INGREDIENTS

-shrimp**

-5 min grits

-onion powder

-shredded cheddar cheese

-salt

-butter

-old bay

-tabasco

-scallions

-a crunchy topping (I would’ve loved garlic crisps or fried onions here but I didn’t have them and was feeling lazy so I crumbled up some ritz crackers)

**I made this with left over shrimp from shrimp cocktail the night before. I reheated the shrimp in a pan with the seasonings mentioned above and tossed it together.

DIRECTIONS

-Cook grits according to pacakge (I am a proud northerner so using instant grits brings me no shame)

-When cooked add in the butter, salt, onion powder, and cheese

-Cook shrimp in a pan with olive oil, old bay seasoning, and tabasco until cooked

-Serve in a bowl, add the shrimp, scallions, extra tabasco, and whatever crunchy topping you could find.

-Enjoy!
