INGREDIENTS
-pasta
-chickpeas
-baby artichokes
-olives
-cherry tomatoes
-basil
-shaved parmesean (feta would work here too)
-balsamic vinaigrette (or really any vinaigrette dressing)
DIRECTIONS
-Roast chickpeas with your favorite seasonings
-Add everything to a bowl and mix! (I like to make it in a container with a lid so I can shake it all together)
-For the balsamic vinaigrette, I used EVOO, balsamic vinegar, s&p, and smashed up Calabrian chiles
