Great for a quick weeknight dinner or a meal prep!
INGREDIENTS
-Chicken thighs
-tumeric
-garlic powder
-paprika
-ginger
-s&p
-olive oil
-rice
-mushrooms
-sesame oil
-scallions
DIRECTIONS
-Marinate chicken thighs in the spices and olive oil
-Heat olive oil and sesame oil in a pan
-When the oil is hot sear chicken on both sides until fully cooked and remove from pan
-Add washed rice into pan and toast then cook according to package instructions
-While the rice is cooking, sauté mushrooms in the same spice mixture, olive oil, and sesame oil
-When the rice is cooked, add mushrooms and toss together
-Add in the chicken and pour the scallion oil over it
Scallion oil:
Add scallions, grated garlic, grated ginger, sesame oil, and salt to a bowl
Heat oil in a pot then pour hot oil over the aromatics and stir
