Thai Beef with Basil

This recipe is adapted from Bon Appetite magazine and Food Network magazine recipes. It’s pretty easy and a great meal prep or dinner. One of the original recipes used snow peas which would be a great addition or substitution for the bok choy. You can change this up however you like and serve it up with rice.

INGREDIENTS

-oil

-2 fresno chiles

-1lb ground beef

-5 tbs fish sauce

-2 tbs lime juice

-1 tbs sugar

-chopped scallions

-chopped bok choy

-2 garlic cloves

-2 cups thai basil

DIRECTIONS

-Combine the soy sauce, fish sauce, lime juice, and sugar in a bowl then whisk.

-Heat oil in a pan and crumble the beef in once its hot. Don’t touch it for a few minutes so it can crisp up then stir with a wooden spoon. When its fully cooked take it out of the pan then drain the fat and wipe the skillet.

-Put the pan back on medium heat then add in the sauce. Bring it to a simmer then add the bok choy and cook for a few minutes. Then add the beef, scallions, chiles, and garlic. Sautee it until everything is cooked through. Take it off the heat then add the basil and stir in until it wilts.

-Serve over rice and enjoy!
