Hearty Chili

Perfect for a cold windy day! This is a super easy one pot meal that is great for dinner or a meal prep.

INGREDIENTS

-olive oil

-1 onion

-3 garlic cloves

-1 bell pepper

-optional: 1 jalapeno

-1.5 lbs ground meat (or turkey)

-s&p

-oregano

-paprika

-cayenne

-cumin

-turmeric

-1 can black beans

-1 can kidney beans

-2 15 oz cans diced tomatoes

-1/2 cup water

-1/2 cup chicken broth

-splash of red wine

-1tbsp tomato paste

DIRECTIONS

-Add oil to your dutch oven. Dice the vegetables and add them in. Cook until soft

-Add in ground beef and break up the meat. Add in seasonings and cook until meat is brown

-Add beans, tomatoes, tomato paste, splash of wine, water, and chicken broth

-Cook for around an hour on medium low stirring occasionally 

-Serve with your favorite fix-ins!

FIX-INS

-Scallions

-Hot sauce-I would’ve just made the chili spicier but I cook for someone who doesn’t like spicy things

-Shredded cheese

-Sour cream- I used all my sour cream to make onion dip this weekend so I had to use that instead of sour cream (don’t judge) it was pretty good

-Corn bread is always amazing with chili but I just didn’t have time to make any 😦
