Chicken Thighs and Roasted Garlic Parmesan Broccoli

Great meal prep recipe! Serve it with homemade hummus (see hummus recipe post)

INGREDIENTS

-chicken thighs

-olive oil

-s & p

-garlic powder

-onion powder

-paprika

-za’atar

-broccoli

-red pepper flakes

-parmesan

-3 cloves of garlic, grated

DIRECTIONS

-Marinate chicken thighs in the spices

-Grill for around 10 minutes flipping halfway through (should have an internal temp of 165 degrees

-Toss broccoli with oil, s&p, parmesan, garlic, red pepper flakes

-Roast at 425 for 15 minutes tossing half way through

-Cover with more parmesan and bake for 5 more minutes

-Serve the broccoli and chicken with homemade hummus (see hummus post for recipe)

The best part is eating the cheesy crispy bits on the pan
