Chicken Pot Pie (spooky version)

Here’s the last of this year’s spooky season recipes! Although I’m considering this a Halloween recipe because I cut a spooky face into the dough, this can be made at any season with just slits in the top crust instead of a face. See the full recipe video on TikTok or Instagram linked below!

INGREDIENTS

-6tbs butter

-4 cups cooked shredded chicken*

-3 stalks of celery, diced

-3 carrots, diced

-8oz package of mushrooms

-1 large onion, diced

-3 cloves of garlic, chopped

-1/3 cup flour

-2 cups chicken broth

-1 cup frozen peas

-1/2 cup heavy cream 

-1 egg for egg wash

-pie dough**

DIRECTIONS

-Melt butter in a dutch oven. Add the onion, celery, and carrot and cook until soft

-Add mushrooms and garlic and cook for another minute or two

-Add in flour and stir for a few minutes. Then add the chicken broth and heavy cream. Cook until it is thick and creamy. Add salt and pepper

-Add in the cooked chicken and frozen peas, then mix

-Take it off the heat and cool slightly

-Add to a pie dish then cover with the rolled out pie dough. Tuck the edges (see note below about dough)

-Here is where you can cut in a design! I cut Jack Skellington’s face in for Halloween. If you aren’t doing something like this just make 2 slits in the center of the pie

-Brush on the egg wash

-Bake at 425 for around 20-25 minutes until golden and enjoy!

*For the chicken, I grilled chicken breast then shredded it. If you’re in a time crunch you can buy a rotisserie chicken and shred that or if you can find cooked pre shredded chicken use that. Make your life easy!!

**When I make chicken pot pie I prefer to do only the top crust. If you prefer both top and bottom, place a rolled out round of dough in the pie dish before putting in the filling. Cook it for a little longer than stated above, 30-35 minutes, to cook all the way through. I used store bought dough, but if you have time by all means make it home made! I’ll be posting my pie dough recipe closer to Thanksgiving.

The face didn’t come out as prominent as I hoped, but it was still delicious!
