Got this recipe from a friend and it’s been my go to since then. You can change it up easily by using different mix ins like EBTB seasoning, chiles, roasted garlic, etc.
INGREDIENTS
-1 can chickpeas
-1/2 cup water
-3 cloves of garlic
-1tbsp salt
-1 lemon juiced
-1/3 cup tahini
-2 tbsp EVOO
-1/2 tbsp paprika
Optional: -2 Calabrian chiles
-pinch of za’tar
DIRECTIONS
-Drain and rinse a can of chickpeas then add to 1/2 cup of boiling water for 1 minute
-Drain it and add chickpeas to a food processor
-Add the garlic, salt, lemon juice, tahini, paprika, (and chiles and za’tar if using)
-Blend it up and stream in the EVOO while pureeing
-Serve with an extra drizzle of olive oil and a dash of paprika
