Every year on August 17th I celebrate risotto day in honor of one of the best meals I’ve ever had. Back in 2018 I went on a sibling trip to Greece. We were all craving risotto but we weren’t sure where to go to find it and we were in a time pinch. We ended up at a random restaurant and they ended up having 3 different kinds of risotto! We all ordered a different one and it was the best risotto ever. It might be a silly tradition, but I’ll take any excuse to eat risotto!

INGREDIENTS:
olive oil
chicken broth
butter
shallot
garlic
arborio rice
white wine
parm
lemon (juice and zest)
chili flakes
shrimp
frozen peas
DIRECTIONS:
-in a pot warm the chicken broth
-heat oil and butter in a pan then add shallot and garlic
-add in arborio rice to toast
-add wine
-when absorbed the wine is absorbed, add chicken broth, onces that is absorbed repeat the process until rice is cooked
-add in parm, salt, and lemon juice
-in another pan heat oil, garlic, lemon zest, chili flakes, salt and pepper
-add shrimp and cook
-mix it all together and enjoy!
-add the cooked shrimp and some peas into the rice
